Spray waffle iron with no-stick cooking spray; preheat.
Beat egg whites in medium bowl until soft peaks form; set aside.
Sift flour, sugar and baking powder into large bowl; set aside. Beat milk, egg yolks and vanilla in small bowl, then stir into flour mixture until smooth. Beat in melted Country Crock® Spread, then gently fold in beaten egg whites.
Spoon batter onto hot waffle iron. Close lid and cook until steam stops and waffle is golden, about 4 minutes. Keep warm until ready to serve. Serve, if desired, with fresh fruit and maple syrup or honey.
