Ingredients

Muffins
  • 5 large eggs
  • 1 cup milk
  • 1/4 cup maple syrup
  • 2 tablespoons Country Crock® 8% Daily Value of Calcium, melted (plus additional for greasing the pan)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 8 cups cubed brioche or challah bread
Topping
  • 1/2 cup all-purpose flour
  • 1/4 cup dark brown sugar
  • 1/8 teaspoon ground cinnamon
  • 1/4 cup Country Crock® 8% Daily Value of Calcium

Instructions

Muffins
  1. Preheat oven to 350 degrees. Grease muffin tin liberally with Country Crock with Calcium; set aside.
  2. In a large bowl combine eggs, milk, maple syrup, melted Country Crock with Calcium, vanilla and cinnamon.
  3. Add bread cubes and toss gently until evenly coated. Let mixture stand while you make the topping.
Topping
  1. Combine flour, brown sugar and cinnamon. Using a fork or pastry cutter, cut Country Crock with Calcium into flour mixture just until mixture forms coarse crumbs. Do not overmix.
Assembly
  1. Divide the bread mixture between the 12 muffin cups. Sprinkle streusel topping on top of the muffins.
  2. Bake 30 minutes or until golden brown and toothpick inserted into centers comes out clean. Allow the muffins to cool in the pan for 5 minutes before removing. Serve with maple syrup or powdered sugar, if desired.
Our favorite way to make the French Toast Muffin Cups is with either brioche or challah, but that doesn't mean these breads are your only options, as most white breads will work with this recipe.
