Ingredients

Cake
  • 1 2/3 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) Country Crock Plant Butter Unsalted Sticks softened (plus additional for greasing the pans)
  • 2 large eggs
  • 1/2 cup plant milk
  • 1 teaspoon vanilla extract
  • 1/2 cup rainbow sprinkles (plus additional for decorating)
Frosting
  • 1 box (16 oz.) confectioners' sugar
  • 1 cup (2 sticks) Country Crock Plant Butter Unsalted Sticks softened
  • 3 tablespoons plant milk
  • 2 teaspoons vanilla extract

Instructions

CAKE
  1. Preheat oven to 350°F. Grease and flour 3 6-inch round cake pans. Line pans with parchment if desired. Combine flour and baking powder in medium bowl; set aside.
  2. Beat sugar with Country Crock® Plant Butter Unsalted Stick in large bowl with electric mixer until fluffy, about 2 minutes. Beat in eggs, 1 at a time, until blended. Combine plant milk and vanilla. Alternately beat in milk and flour mixtures until blended. Gently stir in sprinkles. Spread evenly into prepared pans.
  3. Bake 30 minutes or until tops spring back when touched and toothpick inserted in centers comes out clean. Cool 15 minutes on wire rack; remove from pans and cool completely.
FROSTING
  1. Beat confectioners sugar, Country Crock® Plant Butter Unsalted Stick, milk and vanilla in large bowl with electric mixer until fluffy, about 3 minutes. Spread in between layers and top and sides of cooled cake. Decorate with sprinkles.
Remember, your baby's smash cake is all about, well, smashing! With this in mind, prepare for quite the mess, both on your little one and the surrounding area. Considering this, we believe rainbow sprinkles make for a preferable decorative touch compared to food coloring that may stain.
