5 medium (about 2 lbs.) sweet potatoes, peeled and cubed
3 Tbsp. Country Crock® Spread
3 Tbsp. maple syrup
2 Tbsp. orange juice
1/4 tsp. ground ginger
Add potatoes to 3-quart saucepan and cover with water. Bring to a boil over high heat. Reduce heat to low and simmer 20 minutes or until potatoes are very tender; drain. Mash potatoes. Stir in remaining ingredients until blended.
