Ingredients

  • 12 -16 (about 1 1/2 pounds) small yellow potatoes, halved
  • 6 tablespoons Country Crock® Original Spread, lightly melted, plus more for brushing
  • 6 tablespoons grated Parmesan cheese, plus 2 more tablespoons for sprinkling
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

      Instructions

      1. Preheat oven to 400°F.
      2. Score the halved potatoes diagonally, two cuts in each direction.
      3. In a 9x13 glass baking dish, mix together the melted Country Crock, parmesan, salt, garlic powder, and onion powder to create a paste. Sprinkle an additional 1 tablespoon parmesan on top without mixing.
      4. Place the potatoes over top of the mixture, cut side down, so they are very close together, filling the pan completely.
      5. Brush the potatoes with an additional tablespoon of melted Country Crock and sprinkle with 1 tablespoon parmesan.
      6. Bake for 30-45 minutes, until the potatoes are dark golden brown and crispy on the face (baking time will vary based on the size of your potatoes, so keep an eye on the potatoes, checking every 5 minutes to ensure they do not burn).
      7. Use a thin metal spatula to release the potatoes from the pan as soon as they come out of the oven. Serve warm.
