½ cup (120 mL) Country Crock® Original Spread, plus more for the pan
¼ cup (60 mL) minced parsley
2 garlic cloves, minced
8 slices of white sandwich bread
1 cup (240 mL) shredded mozzarella
½ cup (125 mL) pizza sauce
½ cup (125 mL) pepperoni, quartered
Mix the Country Crock® Original Spread with parsley and garlic. Spread over one side of each piece of sandwich bread.
Spread a thin layer of pizza sauce on the other side every slice of bread. Top 4 slices with a sprinkle of mozzarella, pepperoni and more mozzarella. Place second piece of bread, pizza sauce side down to form a sandwich that has parsley Country Crock® Original Spread on the outside of both slices of bread.
Preheat a cast iron skillet or skillet over medium-low heat, melting a thin layer of Country Crock® Original Spread in the pan. Add on sandwich and cook until the bottom is golden brown and the cheese begins to melt, about 2 minutes. Flip the sandwich and cook until the second side is golden brown and the cheese is melted, about 2 minutes. If your sandwich is browning too quickly, reduce the heat.
