Apple Pie Cookie Bars

Apple Pie Cookie Bars

We love this recipe for Apple Pie Cookie Bars because they're so easy to make. But we love it even more because they're delicious! To make these plant-based bars you just need one batter that you use for the base and the crumb topping. Apples are combined with sugar and spice for a sweet fruity layer in between.

Nutritional Guidelines (per serving)

(Nutrition information is calculated using an ingredient database and should be considered an estimate.)

Instructions

Filling
  1. Toss apples with sugar, flour, lemon juice, cinnamon and salt.
Crust and Crumble
  1. Preheat the oven to 350 degrees. Line a 9-inch square baking pan with parchment paper. Cut enough parchment so ends overhang on 2 sides so you can lift the bars out after they've cooled for easy cutting.
  2. Combine flour, baking powder and salt; set aside.
  3. In large bowl, with electric mixer, beat Country Crock Plant Butter, sugar and vanilla until light and fluffy, about 5 minutes. With the mixer on low, slowly add the flour mixture and mix until just combined.
  4. Reserve ¾ cup dough. Press remaining dough firmly into prepared pan. Spread apple mixture evenly over crust. Crumble reserved dough over apples.
  5. Bake 50 minutes or until fruit is bubbling and top is golden. Cool completely on wire rack. Lift crumble from pan and slice into 16 bars.
Glaze
  1. Combine all ingredients. Drizzle over the apple pie bars. Let cool, then cut into 16 squares.
Feel free to take these apple pie cookie bars on the go—perfect for serving chilled or at room temperature, with or without silverware. Their versatility makes them ideal for picnics, potlucks, and everything in between!
