    Ingredients

    • 12 ounce chicken sausage, mild or hot italian flavor, cut into bite-size pieces
    • 3 cups halved Brussels sprouts
    • 10 ounces frozen sweet potato chunks
    • 1/2 large red onion, cut into 1/2-inch slices (about 2 cups)
    • 1/4 teaspoon salt
    • 1/4 cup Country Crock® Plant Butter With Olive Oil Tub, melted
    • fresh cracked black pepper, about 5 cracks

    Instructions

    1. Preheat oven to 400F.
    2. Arrange all ingredients on a large baking sheet lined with parchment paper.
    3. Drizzle plant butter evenly over all ingredients. Sprinkle salt on the mixture.
    4. Roast for 15 minutes. Then flip ingredients and roast for an additional 15 minutes.
