Instructions
Preheat the oven to 350°F (175°C). Line a muffin tin with 24 liners or grease the cups well
Mix the dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
Mix the wet ingredients: In a separate bowl, whisk the Crock Homestyle™ Butter, sugar, eggs, buttermilk, banana extract (if using), and mashed bananas until smooth and well combined.
Combine: Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or wooden spoon until just combined — a few lumps are okay! Don’t overmix.
Divide the batter evenly among the 24 muffin cups. Fill each about ¾ full.
Bake for 18–22 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean
Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely (or eat one warm — they’re great fresh out of the oven!).
