    Ingredients

    • 2 2/3 cup flour
    • 1 1/2 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1 teaspoon kosher salt
    • 2 sticks sticks Country Crock Homestyle™ Dairy Free Unsalted Butter Sticks melted
    • 2 cup granulated white sugar
    • 2 eggs
    • 1 cup buttermilk or 1 cup milk and 1 teaspoon vinegar
    • 1 teaspoon banana extract Optional
    • 4 ripe bananas mashed

    Instructions

    1. Preheat the oven to 350°F (175°C). Line a muffin tin with 24 liners or grease the cups well
    2. Mix the dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
    3. Mix the wet ingredients: In a separate bowl, whisk the Crock Homestyle™ Butter, sugar, eggs, buttermilk, banana extract (if using), and mashed bananas until smooth and well combined.
    4. Combine: Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or wooden spoon until just combined — a few lumps are okay! Don’t overmix.
    5. Divide the batter evenly among the 24 muffin cups. Fill each about ¾ full.
    6. Bake for 18–22 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean
    7. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely (or eat one warm — they’re great fresh out of the oven!).
