For the dressing:
For the pasta salad:
  • 1 pound fusilli pasta, cooked al dente
  • 1 pint cherry tomatoes, cut in half
  • 1/2 cup thinly sliced red onion
  • 1/4 cup shredded Parmesan cheese
  • 8-10 fresh basil leaves, thinly sliced
  • 1 cup fresh mozzarella, bite-size pieces
For garnish:
  • fresh basil and shredded parmesan

  1. In a small bowl, combine melted Country Crock® Original Spread, garlic, balsamic vinegar, lemon juice, Italian seasoning, salt and pepper. Combine thoroughly and set aside.
  2. Cook pasta al dente, as per package instructions.
  3. In a large bowl, add cherry tomatoes, onions, basil and parmesan.
  4. Pour dressing all over it and mix well. Set aside for 7-10 minutes.
  5. Now add cooked pasta to the mix and toss to combine.
  6. Add bite sized pieces of mozzarella, and mix again.
  7. Garnish with more basil and parmesan, serve and enjoy!
