Chewy Chocolate Chip Cookies

    Ingredients

    • 2 sticks Country Crock Homestyle™ Dairy Free Salted Butter Sticks melted and cooled to room temperature
    • 1/2 cup granulated white sugar
    • 1 1/4 cup lightly packed brown sugar
    • 2 teaspoons vanilla extract
    • 2 eggs Ideally at room temperature
    • 380 G all purpose flour (scant 3 cups)
    • 1 teaspoon baking soda
    • 1/2 teaspoon kosher salt
    • 2 Cups chocolate chunks (milk chocolate chips and semi-sweet chocolate chunks

    Instructions

    1. Preheat the oven to 350ºF and line baking sheets with parchment paper.
    2. In the bowl of an electric mixer, on high speed beat the Country Crock Homestyle™ Butter, granulated sugar, and brown sugar until creamy, about 2 minutes. Scrape down the sides and bottom of the bowl. Add the vanilla and eggs, beating until fully combined, and scrape the bowl as needed. Reduce mixer speed, and gradually mix in flour, baking soda, and salt. Mix until just combined. Then gently stir in the chocolate chips
    3. Use a large cookie scoop to portion the dough into 3-tablespoon-sized balls and place them on the prepared baking sheets.
    4. Bake for 11–13 minutes, or until golden brown. Let cookies cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
