Instructions

  1. Preheat the oven to 450 degrees F.
  2. In a small bowl, whisk together the melted Country Crock Original Spread, salt, pepper and thyme.
  3. Slice your potatoes into 1- 2" rounds and place them in a large bowl. Pour the Country Crock herb mixture over the potatoes and mix until they are all coated.
  4. On a large baking sheet layer the potatoes in a single layer. Place them in the oven and roast for 20 minutes. Then flip the potatoes and roast for another 15 minutes.
  5. Meanwhile mix together your chicken broth and garlic. Remove the potatoes from the oven and flip them once more. Pour the broth mixture over the potatoes and place them back in the oven for another 15 minutes.
  6. Remove from the oven and transfer to a serving plate. Drizzle with the pan sauce and top with fresh parsley and maldon salt.
