Blistered Tomatoes:

  • Balsamic Drizzle or Balsamic Glaze
  • 1 tbsp chopped fresh basil

Instructions

  1. Toast: Heat a skillet on medium-high heat. Add a tablespoon of Country Crock. Once melted, add your bread and toast on both sides until golden brown. Set aside.
  2. Garlic spread: In a small bowl, combine the Country Crock, basil, parsley, and garlic. Mix together with a spoon until the mixture is combined.
  3. Blistered tomatoes: Heat Country Crock in a medium pan over medium-high heat. Add the tomatoes and let them sit undisturbed in the pan for 2 minutes, to blister on the bottom. Add the garlic, salt, and pepper, then stir together with the tomatoes. Let them cook and blister another 2-3 minutes, stirring a few more times, then remove the tomatoes from the heat.
  4. Spread toasts generously with Country Crock garlic spread, a spoonful of blistered tomatoes, drizzle with balsamic drizzle, and sprinkle with chopped fresh basil and enjoy! Store leftover garlic spread in the fridge.
*Don’t have any balsamic glaze? No problem! Simply cook down some balsamic vinegar in a small saucepan on medium heat until it has a syrup consistency... and drizzle to your heart's content.
