Ingredients

  • 4-5 pounds bone-in skin- on chicken parts (thighs,drumsticks,breast, or a mix)
  • 2 tablespoons kosher salt
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme or rosemary
  • 1/4 cup Crock Homestyle™ Dairy Free Salted Butter

Instructions

Prep the Chicken
  1. Pat the chicken very dry with paper towels—this is crucial for crispy skin.
  2. In a small bowl, mix salt, baking powder, garlic powder, paprika, black pepper, onion powder, and thyme.
  3. Rub the seasoning mix all over the chicken
  4. Arrange the chicken uncovered on a wire rack set over a baking sheet and refrigerate for at least 30 minutes (or up to overnight) to dry out the skin.
Roast the Chicken
  1. Preheat oven to 425°F
  2. Drizzle the chicken with half of the melted Crock Homestyle™ Butter
  3. Place the chicken skin-side up on the wire rack (or a parchment-lined baking sheet if you don’t have a rack).
  4. Roast for 35-45 minutes, depending on the size of the pieces.
Baste for Extra Crisp
  1. At the 25-minute mark, brush the chicken with the remaining melted Homestyle butter.
  2. Continue roasting until the skin is deeply golden and crisp, about 10-20 more minutes
Final Crisp & Serve
  1. If needed, broil for the last 2-3 minutes to get extra crunch.
  2. Let the chicken rest for 5 minutes before serving
