Ingredients

  • 6 tbsp Country Crock® Original Spread Original Spread
  • 2 tbsp garlic, minced
  • 1/4 cup shallot, finely chopped
  • 2 tsp red chili flakes
  • 1/2 cup dry white wine (you can substitute the wine with chicken or vegetable broth)
  • Salt to taste
  • 1/4 tsp black pepper
  • 1 lb large shrimp, peeled and deveined (fresh or frozen!)
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 4-6 lemon wedges, for serving
  • 1/4 cup parsley, chopped, for garnish

Instructions

  1. Heat a large skillet over medium-high heat, add Country Crock® Original Spread.
  2. Once melted, add garlic and sauté until fragrant, then add shallots, and cook for about 1 minute.
  3. Add red chili flakes and stir. Now add dry white wine, salt, and pepper. Cook for 1-2 minutes or until wine reduces to half.
  4. Add shrimp, and cook for 1-2 minutes, or until just beginning to turn pink, flip and cook for another 1-2 minutes, until cooked through and are a lovely pink color throughout.
  5. Squeeze lemon juice over the pan, sprinkle lemon zest and parsley and stir/toss to combine.
  6. Serve and enjoy Shrimp Scampi various ways, by itself with bread, or with linguine or any salad of your choice.
*Remember that shrimp cook quickly, so be careful not to overcook them. They are done when they turn pink and are no longer translucent
