For the egg bake
  • 2 tablespoons Country Crock® Original Spread Original Spread
  • 50 grams ham, sliced and cut into cubes
  • 3/4 cup red onion, chopped
  • 3-4 cremini mushrooms, chopped
  • 3/4 cup red pepper, chopped
  • 1/2 cup baby spinach, chopped
  • 12 large eggs
  • 1/4 cup 1% milk
  • 1/2 cup shredded cheddar cheese
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon onion powder
  • salt and black pepper
For sandwiches

  1. Preheat the oven to 300F and generously grease a 9 x 12 baking sheet with Country Crock Original Spread.
  2. Whisk together eggs, milk, salt, pepper, chili powder, onion powder in a large bowl, and set aside.
  3. Sprinkle the baking sheet with ham, red pepper, mushrooms, onion and spinach.
  4. Pour the egg mixture onto the prepared baking sheet with ham and veggies.
  5. Bake until just set, approximately 25-30 minutes.
  6. Portion the baked egg in 12 pieces and sandwich each piece in a buttered English muffin with Country Crock Original Spread.
  7. Enjoy with your choice of hot sauce!
