Ingredients

Pumpkin Waffles
  • 2 cups all purpose flour
  • 3 tablespoons brown sugar
  • 1 tablespoon baking powder
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 1/4 cups milk
  • 1 cup canned pumpkin puree
  • 1/4 cup Country Crock® Original Spread, melted Original Spread

Instructions

Pumpkin Waffles
  1. Spray waffle iron with nonstick cooking spray; preheat to medium high.
  2. Combine flour, brown sugar, baking powder, pumpkin pie spice, baking soda and salt in large bowl; set aside. Beat eggs, milk, pumpkin and Country Crock Spread in small bowl, then stir into flour mixture until just smooth.
  3. Spoon batter onto hot waffle iron. (Use about 1/2 cup batter for tradition waffles, 1 cup batter for Belgian waffles.) Close lid and cook until steam stops and waffle is golden, about 4 to 8 minutes. Hold in warm oven until ready to serve. Makes about 8 regular size waffles or 4 Belgian waffles.
Apple Cider Syrup
  1. Add apple cider, brown sugar and cornstarch to small saucepan and stir until smooth. Bring to a boil over high heat. Reduce heat to low and simmer 1 minute or until thickened. Stir in Country Crock Spread. Serve over hot waffles with additional Country Crock Spread.
