Ingredients

  • 2 tablespoons Country Crock® Original Spread Original Spread
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, chopped
  • 8 ounces ham, diced (about 2 cups)
  • 1 can (14.5 oz.) diced tomatoes
  • 2 cans (15.5 oz. ea.) black eyed peas, rinsed and drained
  • 1 Tbsp. chopped fresh thyme or 1/2 tsp. dried thyme
  • 1/8 tsp. to 1/4 tsp. ground red pepper (optional)
  • 1 bay leaf

Instructions

  1. Melt Country Crock® Spread in 3-quart saucepot. Add onion, pepper and garlic and cook about 6 minutes or until vegetables are tender-crisp. Add ham and cook 2 minutes.
  2. Simply add the canned black eyed peas, tomatoes, and the other remaining ingredients and bring to a boil. Cover and simmer 10 minutes.
