Bring a large pot of salted of water to boil. Add the spaghetti and cook for 7 minutes or as directed on the box, stirring occasionally.
Meanwhile, heat 1 tablespoon of Country Crock® original spread in a medium sauté pan over medium heat. Add the pancetta and cook until crispy. Transfer the pancetta to a paper towel lined plate and set aside.
Give the sauté pan a wipe and then add the remaining Country Crock®, the vegetables, chopped parsley, and salt and pepper. Sauté on medium heat, about 4 minutes. Add the pancetta back to the pan, followed by the cooked and strained noodles, parmesan cheese, and lemon juice. Toss with tongs and serve hot with extra parmesan.
