Summer Vegetable Flatbread

Ingredients

1 small zucchini, cut crosswise into 1/4-inch-thick slices
1 small yellow summer squash cut crosswise into 1/4-inch-thick slices
3/4 teaspoon salt
1 (16 1/2 x 6 inch) store bought flatbread crust
6 tablespoons Country Crock Plant Butter Tub with Olive Oil melted and divided
1 cup vegan feta cheese
3 tablespoons Country Crock® Plant Cream
1 teaspoon freshly grated lemon zest plus 1/2 teaspoons of fresh lemon juice
3/4 teaspoon garlic powder
1 tablespoon chopped fresh basil plus extra to serve
1/2 cup halved assorted baby heirloom tomatoes

Instructions

Preheat oven to 425°F. Spread Zucchini and squash on a paper towel-lined cutting board or baking sheet; sprinkle on both sides with salt; set aside
Brush crust on both sides with 2 tablespoons of the Country Crock Plant Butter; bake on a parchment paper-lined baking sheet until toasted but tender, about 6 minutes. Transfer to a serving platter and keep warm.
Pat zucchini mixture dry with paper towels; toss with 1 tablespoon of the Country Crock Plant Butter on a parchment paper-lined baking sheet. Roast until browned and very tender, 20 to 25 minutes, flipping once halfway.
Meanwhile, process feta, Country Crock Plant Cream, lemon zest and juice, garlic powder, and remaining 3 tablespoons of the Country Crock Plant Butter in a food processor until smooth, about 1 minute. Stir in basil.
Spread feta mixture over crust, leavving a 3/4 inch border. Top with zucchini mixture and tomatoes. Garnish with basil leaves. Cut into slices and serve.
