Ingredients

Latkes
  • 1 pound sweet potatoes (about 1 large or 2 medium sweet potatoes), grated (about 4 cups)
  • 3 green onions, finely chopped (about 1/3 cup)
  • 1/3 cup all-purpose flour
  • 2 eggs, lightly beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons Country Crock® Original Spread, divided Original Spread
Chipotle Dipping Sauce
  • 1/2 cup sour cream
  • 1/4 teaspoon chipotle chili powder
  • pinch salt
Cinnamon Dipping Sauce
  • 1/2 cup plain Greek yogurt
  • 1/2 tablespoon honey
  • 1/4 teaspoon cinnamon
  • pinch salt

Instructions

  1. Grate the sweet potato and place in a medium bowl. Add green onion, flour, eggs, salt and black pepper. Mix well to combine.
  2. Heat 2 teaspoons Country Crock Spread in large nonstick skillet. Add batter in ¼ cupfuls to skillet. Cook 3 to 4 minutes per side until lightly browned. Repeat with remaining Spread and batter. Place cooked latkes on paper towel to drain.
  3. For sauces, combine all ingredients.
  4. Serve with sauces and sprinkle with green onion if desired.
