Preheat the oven to 375 degrees F.
Place potatoes on a baking sheet, drizzle with Country Crock® Original Spread and season with salt and pepper.
Bake for around 25-30 minutes or until fork tender and golden on the outside.
Once potatoes are done, remove from the oven and set aside for 10-15 minutes until cool enough to handle.
Cut the potatoes in halves, and using a melon baller or spoon, scoop out baked potato leaving a small rim on the inside so that the potatoes hold their shape. Transfer to a mixing bowl.
Add the Country Crock® Original Spread, sour cream, cream cheese, half of the chives, salt, and pepper to the potato mixing bowl and combine until smooth and creamy.
Spoon the potato mixture back into the hollow potatoes and place back on the baking sheet and bake for 5 -7 minutes, until potatoes are warmed through.
Garnish each potato bite with chives and grated parmesan, serve hot and enjoy.
