Ingredients

Berry Compote
  • 3 cups fresh or frozen mixed berries: strawberries, blackberries, raspberries and/or blueberries
  • 1 tablespoon maple syrup
  • 1 tablespoon cornstarch
Maple Spread
  • 1/4 cup maple syrup
  • 1 tablespoon melted Country Crock ® Original Spread
French Toast
  • 4 eggs
  • 1/3 cup oat milk or non-fat milk
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 8 -10 slices brioche or white bread
  • 1/3 cup Country Crock ® Original Spread, plus more for serving

Instructions

  1. Prepare the berry compote. Combine the berries, maple syrup, and cornstarch in a medium saucepan over low heat. Cook, stirring frequently, until the berries start to break down and juices thicken, 15-20 minutes. Transfer to a bowl and set aside.
  2. Prepare the maple spread, whisk together maple syrup and melted Country Crock Original Spread. Set aside.
  3. In a medium mixing bowl, whisk together eggs, milk, cinnamon, and vanilla. Pour mixture into a shallow wide dish like a pie pan or a baking dish. Working one at a time, lay a piece of bread in the egg mixture for about 30 seconds per side.
  4. Meanwhile, melt 1 tablespoon Country Crock in a large skillet over medium heat. Scrape any extra egg mixture off the bread and fry the bread for 1-2 minutes per side. Repeat with remaining bread.
  5. Serve french toast topped with a pat of Country Crock, a spoonful of berry compote, and a drizzle of maple spread.
