Ingredients

  • 1 tablespoon flax meal
  • 1 1/2 cups gluten-free rolled oats
  • 1 cup assorted coarsely chopped nuts, we used pecans, walnut and pistachios
  • 1/4 cup Country Crock® Plant Butter Sticks with Avocado Oil, melted avocado sticks
  • 3 tablespoons maple syrup
  • 1/2 teaspoon cinnamon
  • 1 cup vegan yogurt
  • 1 1/2 cups cut up assorted fresh fruit, we used kiwi, strawberries, raspberries and blueberries
  • 1 tablespoon almond butter, melted

Instructions

  1. Preheat oven to 375 degrees. Line baking sheet with parchment. Combine flax meal with 3 tablespoons water. Let stand 10 minutes.
  2. Add oats and nuts to bowl of food processor. Pulse a few times until oats and nuts are a coarse, crumbly texture. Be careful not to over process, you want to have some texture.
  3. Combine oat mixture, Country Crock Plant Butter, maple syrup, cinnamon and flax egg. Press mixture into 10-inch circle on prepared baking sheet. Bake 15 minutes or until edges are just golden.
  4. Remove from oven and cool. Spread yogurt over crust and arrange fruit over yogurt. Drizzle with almond butter and additional maple syrup, if desired.
Be sure to use parchment paper when making this as the crust is delicate and the parchment will make it easier to handle. This is definitely a knife and fork pizza! Instead of one large pizza, you can divide out mixture into 4 and make 4 individual sized pizzas.
