  1. Preheat oven to 350 degrees F.
  2. Combine water, quinoa, and 1/2 teaspoons Country Crock® Plant Butter in a small pot. Bring to a boil, cover, reduce the heat, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes.
  3. Meanwhile, add 1 tablespoons Plant Butter to a large pan set over medium heat. Sauté onions and garlic until translucent, about 3-5 minutes. Add vegan sausage to pan and cook until heated through. Add tomato and cooked quinoa, and stir to combine. Set aside.
  4. Prepare bell peppers by cutting in half lengthwise, and scrape out seeds and white membrane using a spoon. Melt remaining Plant Butter and drizzle over peppers. Place peppers, cut side up, on baking sheet.
  5. Scoop quinoa mixture into peppers. Sprinkle Violife® Just Like Cheddar shreds on top, and bake for 20-25 minutes, or until peppers are fork tender.
