Ingredients

Flourless Chocolate Mug Cake
  • 3 tablespoons cocoa powder
  • 3 tablespoons granulated sugar
  • 1/8 teaspoon baking powder
  • 1/8 teaspoon kosher salt
  • 2 tablespoons Country Crock ® Plant Butter with Avocado Oil Stick, melted and cooled
  • 1 large egg white
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon hot water
  • 1 ounce good-quality bittersweet chocolate chips sprinkled on top (roughly 1 1/2 tablespoons)
Buttercream:
  • 1 tablespoon Country Crock ® Plant Butter with Avocado Oil Stick, melted and cooled
  • 5 tablespoons confectioners' sugar, sifted
  • 1/4 teaspoon pure vanilla extract
  • 1 -2 teaspoons oat milk
  • Optional: rainbow sprinkles

Instructions

Flourless Chocolate Mug Cake
  1. In a small bowl, whisk together the cocoa powder, sugar, baking powder, and salt with a fork. Note: you can use the mug you’ll be baking in, but to keep it clean and pretty looking for a celebration, we recommend a separate bowl.
  2. Add the melted Country Crock® Plant Butter with Avocado Oil Stick, egg white, and vanilla and whisk until completely combined.
  3. Pour in the hot water and whisk until smooth. Pour the batter into a 12 ounce or larger microwave-safe mug. Carefully sprinkle 1 ounce of chocolate chips over the top.
  4. Microwave on high for 2- 2½ minutes, until the cake is cooked to the touch. Note: the cake will rise and fall in the microwave – this is normal. Serve warm as is or let cool completely and top with a dollop of buttercream and sprinkles.
Buttercream:
  1. In a small bowl, mash the Country Crock® Plant Butter with Avocado Oil Stick together with the powdered sugar, vanilla and 1 teaspoon oat milk using a small rubber spatula. Add additional oat milk as needed until soft and spreadable.
  2. Pipe or dollop frosting on cooled mug cake and top with sprinkles.
