Flourless Chocolate Mug Cake
In a small bowl, whisk together the cocoa powder, sugar, baking powder, and salt with a fork. Note: you can use the mug you’ll be baking in, but to keep it clean and pretty looking for a celebration, we recommend a separate bowl.
Add the melted Country Crock® Plant Butter with Avocado Oil Stick, egg white, and vanilla and whisk until completely combined.
Pour in the hot water and whisk until smooth. Pour the batter into a 12 ounce or larger microwave-safe mug. Carefully sprinkle 1 ounce of chocolate chips over the top.
Microwave on high for 2- 2½ minutes, until the cake is cooked to the touch. Note: the cake will rise and fall in the microwave – this is normal. Serve warm as is or let cool completely and top with a dollop of buttercream and sprinkles.
