Ingredients

Taco Bites
  • 10 (7 - 8 inch) flour tortillas
  • 4 tablespoons Country Crock ® Original Spread
  • 1 cup frozen sweet corn,thawed
  • 2 medium sized avocados, thinly sliced
  • 1 cup cheese, of choice
Salsa
  • 3 Roma tomatoes
  • 2 cloves garlic
  • 1/2 medium white onion
  • 1 jalapeno
  • 1 green chili
  • 1 lime, juiced
  • 1/2 cup cilantro
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
Guacamole
  • 1 medium sized avocado
  • 3 cloves garlic
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • salt to taste
  • black pepper to taste

Instructions

  1. Using a 3.5 inch round cookie cutter, cut two rounds from each tortilla.
  2. Assemble one half of each tortilla round l with avocado, corn and cheese.
  3. Heat a large nonstick skillet over medium-low heat, and add Country Crock Original Spread.
  4. Fold the tortillas in half, add them to the pan.
  5. Using a spatula, press down on the tortillas to flatten
  6. Cook about 2 to 3 minutes until golden then flip over.
  7. Cook an additional 2 to 3 minutes or until golden and crispy.
  8. Serve with Salsa and Guacamole, and enjoy!
Salsa Recipe
  1. In the bowl of a food processor, add the tomatoes, garlic, onion, jalapeno, green chili, cilantro, lime juice, cumin and salt.
  2. Pulse until you reach the desired consistency.
  3. Serve & Enjoy.
Guacamole Recipe
  1. In a food processor, blend the avocados, garlic and lime juice until you reach the desired consistency.
  2. Mix in the salt and black pepper, and drizzle with olive oil.
  3. Serve & Enjoy.
