- 4 cups vegetable stock
- 2 1/2 cups dry penne
- 1 cup canned pumpkin puree
- 2 tablespoons tomato puree

1/2 cup Country Crock® Plant Cream

1/2 stick Country Crock® Plant Butter Sticks with Olive Oil, cubed

- salt and black pepper
- 1/2 cup vegan parmesan cheese, grated
- thyme, for garnish

Instructions
- In a pot over high heat, add vegetable stock, once boiling, add penne.
- Once the pasta is al dente, about 6-7 minutes, add pumpkin puree and tomato puree, mix to incorporate
- Reduce heat to low and add Country Crock® Plant Cream, and then Country Crock® Plant Butter and toss penne to coat.
- Season pasta with salt and pepper.
- Garnish with vegan parmesan and thyme, serve hot and enjoy!
