Preheat the oven to 350 F.
In a large mixing bowl, beat Country Crock Plant Butter, sugar and softened vegan cream cheese. Beat until light and fluffy.
Add egg yolk and vanilla extract to the Plant Butter – Sugar mixture, and beat until fully incorporated.
In a separate bowl, add all-purpose flour and salt.
Gradually add flour mixture to Plant Butter mixture, spoon by spoon, and beat until well incorporated.
Place dough in a cookie press with your choice of disk, as per instructions.
Press dough out onto a lined baking sheet and make various designs.
Bake for 10-12 minutes or until the cookies are golden brown on the edges.
Take out the cookies and move them to a cooling rack.
Decorate spritz cookies with a melted chocolate drizzle and sprinkles.
