Grate the sweet potato and place in a medium bowl. Add green onion, flour, eggs, salt and black pepper. Mix well to combine.
Heat 2 teaspoons Country Crock Spread in large nonstick skillet. Add batter in ¼ cupfuls to skillet. Cook 3 to 4 minutes per side until lightly browned. Repeat with remaining Spread and batter. Place cooked latkes on paper towel to drain.
For sauces, combine all ingredients.
Serve with sauces and sprinkle with green onion if desired.
