Ingredients

Crust
  • 1 cup packed soft pitted dates
  • 1/4 cup cocoa powder
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup chopped walnuts
Filling
Chocolate Ganache

Instructions

  1. In a large food processor, pulse the crust ingredients until you can pinch it together and it sticks. If the crust is still loose, add a teaspoon of water at a time until it gathers together in your hands.
  2. Evenly press into an 8-inch baking square and place in the fridge while making the filling.
  3. Add the filling ingredients into a blender and blend on high until a smooth batter appears. Pour onto the crust and spread evenly. Place in the freezer for 2 hours to set.
  4. In a small saucepan, melt the chocolate and Country Crock Plant Butter until smooth. Pour over the top of the bars and smooth out evenly from edge to edge.
  5. Place in the fridge to set for 15 minutes.
  6. Cut into 8 large squares or 16 small squares. Enjoy!
