Vegan Pumpkin Mac 'n Cheese

In the spirit of pumpkin everything, we've added pumpkin to our easy Mac 'n Cheese Recipe. Pumpkin, plant milk, plant cheese and Country Crock Plant Butter come together to make this mac and cheese so rich, creamy and delicious. Best of all, you can have this on the table in less than 30 minutes. Don't skip the spiced pepitas. They're so good you might want to make an extra batch just for snacking.

Ingredients

  • 8 ounces campanelle pasta (or your favorite pasta shape)
  • 2 tablespoons Country Crock® Plant Butter with Olive Oil Tub
  • 1 small onion, chopped
  • 2 tablespoons all-purpose flour
  • 1 1/4 cups oat milk
  • 1 cup canned pumpkin puree
  • 1 cup Violife 100% Vegan Just Like Cheddar Shreds
  • 2 tablespoons Violife 100% Vegan Just Like Grated Parmesan
  • 1/8 to 1/4 teaspoon ground nutmeg
Spiced Pepitas
  • 1 tablespoon Country Crock® Plant Butter with Olive Oil Tub
  • 1/2 cup pepitas
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon regular or smoked paprika
  • pinch cayenne pepper

Instructions

  1. Cook pasta in large pot according to package directions; drain and keep warm.
  2. Meanwhile, melt Country Crock® Plant Butter over medium heat in large saucepan. Add onion and cook until tender, about 4 minutes. Stir in flour and cook, stirring constantly, 1 minute. Stir in oat milk and bring to a boil over medium-high heat, stirring frequently.
  3. Reduce heat and cook until thickened, stirring occasionally, about 5 minutes. Stir in pumpkin, cheeses and nutmeg until melted; remove from heat. Toss pasta with sauce, top with spiced pepitas and serve.
Spiced Pepitas
  1. Melt Plant Butter in medium nonstick skillet over medium heat. Add pepitas and toss to coat with Plant Butter. Cook, stirring frequently, about 4 minutes or until pepitas are beginning to brown and pop. Remove from heat and stir in salt and spices. Cook 1 minute, remove from heat immediately.
