For the crust:
  • 8 graham crackers
  • 2 tablespoons light brown sugar
  • a pinch of salt
  • 1/2 stick Country Crock® Plant Butter Sticks with Avocado Oil, melted
For the filling:
  • 10 ounces Country Crock® Plant Cream, whipped
  • 10 ounces sweetened condensed coconut milk
  • 4 tablespoons Key lime juice, freshly squeezed or bottled
  • lime green food color
  • 2 teaspoons lime zest

For the crust:
  1. Preheat the oven to 325F.
  2. Add graham crackers to the food processor and pulse until fine.
  3. Now add brown sugar and salt to it and mix completely.
  4. Pour melted Plant Butter into the mixture, mix completely and fill a muffin tray lined with muffin cups.
  5. Press down the crust using a small bottom drinking glass, and bake for 10 minutes.
  6. Let it cool completely, for at least an hour before pouring in the filling.
For the filling:
  1. In a stand mixer with a whisk attachment, whisk the Country Crock® Plant Cream until firm peaks form.
  2. In another bowl, pour in the condensed coconut milk, lime juice and add lime green food color to achieve desired color.
  3. Now fold in the whipped Plant Cream until filling is mixed evenly.
  4. Pour into the muffin tray once the crust has cooled completely.
  5. Refrigerate for 4-6 hours or overnight.
  6. Garnish with lime slices, mint (optional), and lime zest. Enjoy!
