Irish Soda Bread

  • 3/4 cup raisins
  • 1/2 cup water
  • 4 cups all-purpose flour
  • 2 Tbsp. sugar
  • 2 tsp. caraway seeds (optional)
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. cream of tartar
  • 1 tsp. salt
  • 1/3 cup PLUS 1 Tbsp. Country Crock® Calcium plus Vitamin D, divided*
  • 1 1/2 cups buttermilk


  1. Combine raisins with boiling water in medium bowl; set aside.
  2. Preheat oven to 400°. Line baking sheet with parchment paper or aluminum foil sprayed with nonstick cooking spray; set aside.
  3. Combine flour, sugar, caraway seeds, baking soda, cream of tartar and salt in large bowl. Cut in 4 tablespoons Country Crock® Calcium plus Vitamin D with fork until mixture is size of coarse crumbs.
  4. Drain raisins and pat dry. Stir buttermilk and raisins into flour mixture with fork just until dough forms. Knead dough on lightly floured surface about 8 to 10 times. (Do not over knead). Shape into 6-inch circle; arrange on prepared pan. Cut 1/2-inch-deep ''X'' with sharp knife into top of dough. Melt remaining 1 tablespoon Spread and brush on dough.
  5. Bake 35 minutes or until thermometer inserted in center reaches 180° or skewer inserted in center comes out clean. Serve slightly warm or cool on wire rack.
