Melt Shedd's Spread Country Crock® in large skillet over medium heat and cook onion, stirring occasionally, until almost tender, about 4 minutes. Add bacon and garlic and cook over medium heat, stirring occasionally, until bacon is almost cooked, about 4 minutes.
Stir in cooked cabbage, carrots and peas and cook, stirring occasionally, 5 minutes. Stir in mashed potatoes. Press down potato mixture to cover bottom of skillet. Cook over medium heat until bottom is golden, about 3 minutes. Turn over potato mixture with spatula, then press down again in skillet. Cook until bottom is golden, about 3 minutes. Turn onto cutting board or platter and cut into wedges to serve.
