Extra Creamy Cheesecake

  • CRUST:
  • 2 cups graham cracker crumbs
  • 1/2 cup granulated sugar
  • 3/4 tsp. ground cinnamon
  • 6 Tbsp. Country Crock® Baking Sticks, melted
  • 2 package (8 oz) cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 container (16 oz.) sour cream
  • 2 tsp. vanilla extract
  • 1 tsp. grated lemon peel


  1. Preheat oven to 325°. Spray 9-inch springform pan with non-stick cooking spray.
  2. CRUST: Combine graham cracker crumbs, sugar and cinnamon in medium bowl. Stir in melted Country Crock® Baking Sticks. Press crumb mixture on bottom and halfway up sides of prepared pan.
  3. CHEESECAKE: Beat cream cheese and sugar in large bowl with electric mixer until smooth. Beat in eggs. Beat in sour cream and vanilla until blended. Stir in lemon peel. Pour into crust.
  4. Bake 1 hour or until almost set in center. Turn oven off; open door slightly and let cake cool in oven about 20 minutes. Remove from oven and cool completely on wire rack. Cover and refrigerate overnight.

TIP: For a cheesecake without cracks, when preheating oven, place a baking pan filled halfway with water on bottom rack. Bake cheesecake on middle rack.

SERVING SUGGESTION: For a strawberry topping, melt 2 Tbsp. Country Crock® Baking Sticks in a large nonstick skillet over medium-high heat. Add 1 lb. sliced strawberries and 2 Tbsp. sugar and cook just until softened, about 4 minutes. Remove from heat and stir in 1 tsp. grated lemon peel. Cool. Spread over top of cooled cheesecake.
