It’s peach season! This is an easy weeknight dessert with only 15 minutes of prep time. Juicy baked peaches with crumbly dairy free oat crumble and topped with a dairy free ice cream of your choice. The drizzle of maple syrup and chopped pecans really elevates your stuffed peach dessert.

Instructions

  1. Preheat the oven to 350 F.
  2. Using a sharp knife cut 1/4-inch off the top of the peach around the pit. Using the knife, carefully wedge the pit out of the peach. Freestone peaches are easier to work with in this instance. Using a melon baller or spoon, scoop out and discard some flesh from the center of each peach, creating a cavity large enough to hold streusel but leaving enough flesh to give the peach stability. Place peaches cut side up in your greased baking dish.
  3. In a medium bowl, combine flour, sugars, cinnamon, salt, pecans, and oats. Add in pieces of Country Crock Plant Butter and use your fingers to rub the Plant Butter into the dough until the mixture is crumbly and the Plant Butter is pea sized or smaller.
  4. Stuff peaches with oat topping, pressing down. Scatter any remaining topping around the peaches. Bake for 35-45 minutes, until the topping is lightly browned and the peaches have softened but are still holding their shape. Allow to cool slightly. Serve your baked peach dessert warm with our no-churn dairy-free vanilla ice cream and if you desire, top with chopped pecans and drizzle with maple syrup. Enjoy!
Freestone peaches have flesh that easily separates from the pit, making them easier to work with in dessert recipes like this one! When cutting a freestone peach, the pit can be easily removed by cutting around it, and the flesh can be cleanly scooped out without much effort. This makes them ideal for stuffed or baked peach recipes.
