Ingredients

  • 8 ounces fettuccine (or pasta of your choice)
  • 1/2 cup Country Crock Homestyle™ Dairy Free Salted Butter
  • 1 tablespoon all-purpose flour
  • 2 minced garlic cloves
  • 1 lemon juiced and zested
  • 1 1/2 cups Country Crock Homestyle™ Dairy Free Heavy Whipping Cream
  • Salt and Pepper to Taste
  • 1/2 cup Violife 100% Vegan Just Like Grated Parmesan
  • fresh parsley chopped for garnish

Instructions

  1. Cook the fettuccine pasta according to package instructions until it is al dente. Drain the pasta and set it aside, saving about 1/2 cup of the pasta cooking water.
  2. In a large skillet or saucepan, melt the Country Crock Salted Plant Butter over medium heat.
  3. Add minced garlic and sauté for a minute or so, until the garlic becomes fragrant.
  4. Add 1 tbsp of flour and cook for about a minute. Then whisk in the Country Crock Plant Cream. Cook until bubbling and slightly thickened.
  5. Season with salt, pepper, lemon juice, zest and Violife Parmesan, if using.
  6. If needed, adjust the consistency of the sauce by incorporating reserved pasta cooking water.
  7. Serve hot and garnish with extra lemon zest and fresh parsley, if desired.
