Ingredients

Chocolate Cookies
  • 1 1/3 cups all purpose flour
  • 1/3 cup Dutch process cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/2 cup Country Crock® Plant Butter Sticks with Avocado Oil avocado sticks
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 1/2 ounces semisweet chocolate chips or bittersweet chocloate chips

Instructions

  1. Preheat oven to 350°F and line a large baking sheet with parchment paper.
  2. In a medium mixing bowl, sift together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment or a large mixing bowl with a hand mixer, cream the plant butter and both sugars together on medium speed until light and fluffy, 3-5 minutes. Scrape down the sides and add the egg and vanilla extract and beat until just combined.
  4. With the mixer on low speed, slowly add the dry ingredients until just combined. Transfer half of the dough to a separate bowl –this will be for the bottom of the cookie. Add the chocolate chips to half and beat for a few seconds until evenly distributed.
  5. Chill both bowls of dough while you mix the filling. In a medium bowl, mix together the cream cheese, powdered sugar, and vanilla with a fork until completely smooth. Add food coloring and mix until green.
  6. Scoop a tablespoon of the smooth dough, roll it into a ball and gently flatten it into a 2-inch round. Scoop 1 teaspoon of the green filling into the center. Scoop a tablespoon of the chocolate chip dough, roll it in a ball and gently flatten it into a 2-inch round. Place it on top of the filling, pinching the sides all the way around. Roll it into a ball. Repeat with the rest of the dough, placing them 2-inches apart on the baking sheet, working in batches as needed.
  7. Bake 13-15 minutes until the top and edges are set, but center still soft. Let cool on the baking sheet for 5 minutes before using a thin spatula to transfer to a wire rack to cool completely.
