Ingredients

  • 2 tablespoons Country Crock® Original Spread Original Spread
  • 3 chicken breasts
  • 1 red onion, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon apple cider vinegar
  • 1 lime wedge
  • 1/4 cup cilantro, chopped
  • 8-12 corn tortillas
  • guacamole, cheese, sour cream, and salsa for serving

Instructions

  1. Gently salt each side of the chicken breast. BBQ the chicken on each side for about 5-8 minutes each.
  2. In a large 10-inch skillet over medium/high heat add the Country Crock® Original Spread, then add the onion, peppers, salt and pepper. Continue to cook stirring occasionally until the vegetables start to soften, about 5-7 minutes. Add in the apple cider vinegar and toss together generously.
  3. Take off the heat and add in the grilled chicken, sprinkle with a squeeze of lime and cilantro.
