Instructions

  1. Line an 8 x 8” baking dish with parchment paper. Prep a small bowl of ice water.
  2. Place the cubed Country Crock Plant Butter in a large microwave-safe bowl, such as thick glass, and microwave until it melts, about 20-30 seconds
  3. Add brown sugar, corn syrup, dairy free sweetened condensed milk, and salt and mix until combined. Return to microwave and cook, uncovered, for 6-7 minutes.
  4. Bowl will be hot! Using protective mitts/pads, carefully remove bowl from microwave. Add in vanilla extract and mix well. To test, drop a bit of the caramel into the bowl of ice water. If a small, malleable bead forms, the caramel is ready. If a bead doesn’t form, microwave for 30 more seconds and test again.
  5. Pour mixture into prepared baking dish and sprinkle with sea salt flakes, if desired. Refrigerate for at least 20-30 minutes to set.
  6. Lift out caramel and place on cutting board. Cut into rectangular pieces (we recommend cutting into 4 along one side and then 8 along the other side to make 32 pieces). Depending on how quickly you slice, you may need to pop it back in the fridge so it’s firm enough to cut. Wrap the pieces in parchment or wax paper. Enjoy!
