Instructions
In a standing mixer, beat the Plant Butter, and sugars together for about 5 minutes until light and fluffy. Add in the egg (or egg substitute) and vanilla and beat for another minute. Add in the rest of the dry ingredients and beat until well combined, about 2 minutes. Place the dough in the fridge to chill for 1 hour.
Preheat the oven to 350 degrees.
Scoop out 2 tablespoons of cookie dough and place on a baking sheet 2 inches apart. Bake for 10-12 minutes. Once cooled slightly press down with your fingers to flatten slightly.
Beat the ingredients for the buttercream together until a frosting appears. Add food coloring to preference.
Pipe a dollop of the frosting in the center of each cooking and place the chocolate kiss on top. Enjoy!
