  • 1/4 cup Country Crock Drizzle & Sizzle
  • 2 russet potatoes peeled and grated
  • 1 cup corn kernels (fresh or canned)
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/2 oz chives chopped
  • 2 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

  1. In a large mixing bowl, combine the grated potatoes, corn kernels, all-purpose flour, grated Parmesan cheese, eggs, and half of the chopped chives. Season with salt and pepper. Mix well to combine.
  2. Heat a medium skillet over medium heat. Once hot, add a drizzle of Country Crock Drizzle & Sizzle.
  3. Use an ice cream scoop to add approximately ¼ cup of potato batter into the pan. Press down with the spatula to ensure they are evenly pressed onto the pan.
  4. Fry for 3-4 minutes on each side.
  5. Remove and season with extra salt.
  6. Serve with more Country Crock Drizzle & Sizzle and chives.
