Ingredients

  • 1 1/2 cups 2% milk
  • 1/4 cup Country Crock® Light Spread
  • 4 teaspoons all-purpose flour
  • 2 cups shredded sharp cheddar cheese
  • 1 medium tomato, chopped
  • 1/2 cup chopped jarred roasted red pepper
  • 1 can (4.5 oz.) chopped green chilies
  • 3 slices bacon, cooked and crumbled
  • 8 ounces elbow macaroni, cooked and drained

Instructions

  1. Preheat oven to 350°.
  2. Whisk milk, Country Crock® Spread and flour in large saucepan; bring to a boil over medium-high heat, whisking frequently. Reduce heat and cook, stirring occasionally, until thickened, about 5 minutes.
  3. Stir in remaining ingredients except macaroni. Cook, stirring occasionally, until cheese is melted. Stir in macaroni.
  4. Pour mixture into an 8-inch baking dish. Bake until heated through, about 15 minutes.
