Ingredients

Sweet Potatoes
Vegan Ranch Dip
  • 1 cup Violife 100% Vegan Just Like Sour Cream
  • 3/4 cup Country Crock® Plant Cream
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons chopped fresh dill
  • 2 cloves garlic, finely chopped
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon onion powder
  • 3/4 teaspoon sea salt
  • 3/4 teaspoon cracked black pepper

Instructions

Sweet Potatoes
  1. Preheat oven 400° F. Lightly brush a 12 cup muffin tin with melted Country Crock Plant Butter. Slice potatoes using a mandolin set to 2mm thickness. You should have about 10 to 12 cups of sliced sweet potatoes.
  2. In large bowl, combine sweet potatoes and Country Crock Plant Butter. Add Violife Just Like Grated Parmesan, thyme, garlic, salt and pepper. Toss well until evenly coated.
  3. Evenly layer sweet potatoes in prepared muffin tin. Layers will stack higher than the top of the tin but potatoes will shrink by about half during cooking.
  4. Cover with aluminum foil and place on baking sheet. Place in oven and bake 25 minutes. Remove foil and continue cooking for 35 minutes or until potatoes are tender and browned.
Vegan Ranch Dip
  1. Combine all ingredients. If mixture is too thick, add a little more Country Crock Plant Cream until desired consistency. Store in refrigerator up to one week.
To Serve
  1. Remove potatoes from oven and run a knife around edges of each stack to loosen. Finish the stacks with another sprinkling Violife Just Like Grated Parmesan and serve with a bowl of the Vegan Ranch Dip. Enjoy!
