There's nothing like homemade cheesecake. Our light, Creamy Cheesecake Recipe is easy and foolproof. We mix Country Crock with graham cracker crumbs and sugar for the crust, then combine cream cheese, sugar, eggs, vanilla and just a bit of lemon zest for the delicious, creamy filling. Make this cheesecake a day ahead so it has time to set.

Instructions

  1. Preheat oven to 325°.
  2. Combine graham cracker crumbs, 1/2 cup sugar and Country Crock® Plant Butter in medium bowl until thoroughly mixed. Press crumb mixture on bottom and halfway up sides in 9-inch springform pan.
  3. Beat cream cheese, sour cream and remaining 1 cup sugar in large bowl with electric mixer until smooth. Beat in eggs, vanilla and lemon peel until smooth. Pour into prepared pan.
  4. Bake 1 hour 15 minutes or until almost set in center. Turn oven off, open door slightly and let cake cool in oven about 20 minutes. Remove from oven and cool completely on wire rack. Cover and refrigerate overnight. To serve, top with sliced strawberries.
TIP: Try using chocolate wafer, ginger snaps or vanilla wafer crumbs. Try different flavorings by using almond extract or other flavorings instead of vanilla extract. OR, drizzle with melted peanut butter.
