Ingredients

  • 1 1/2 cups raw cashews, soaked overnight in cold water
  • 3/4 cup + 2 tablespoons water
  • 1/4 cup + 2 tablespoons fresh lemon juice
  • 1/4 cup Country Crock Plant Butter Tub with Olive Oil, melted olive oil spread
  • 2 teaspoons liquid aminos
  • 1 cup chopped cilantro
  • 1/2 cup chopped fresh Italian parsley
  • 2 tablespoons chopped chives
  • 1 large garlic clove, finely chopped
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon paprika
  • chips and crackers, for dipping

Instructions

  1. Add all of the ingredients to a food processor. Process until smooth, scraping down the sides of the bowl occasionally. The dip will not be completely smooth. It should have some texture to it. Add more salt, if desired.
  2. Serve with chips and crackers.
