  • 1 pound peeled and deveined shrimp
  • 4 teaspoons Cajun spice seasoning, divided
  • 2 tablespoons Country Crock® Original Spread
  • 1 1/3 cups long grain white rice
  • 2 2/3 cups water or chicken stock*
  • 1 clove garlic, chopped
  • 1/4 teaspoon salt
  • 1 cup chopped red bell pepper
  • sliced scallions, for topping

  1. Toss shrimp with 2 teaspoons of Cajun seasoning.
  2. Melt Country Crock® in a large pan. Cook the shrimp until they are browned and are completely opaque. Flip shrimp halfway through cooking to brown on both sides. Remove the shrimp from the pan and keep aside.
  3. Pour rice into the same pan and stir. Add water or chicken stock, the remaining Cajun seasoning, garlic, and bell pepper. Bring everything to a boil. Then reduce heat to simmer, cover pan with a tight fitting lid, and cook for 20 minutes**
  4. Remove the pan from the stovetop. Stir in shrimp and sprinkle chopped scallions on top before serving.
