In a medium bowl, mash the avocado and chickpeas with a fork or a potato masher until almost smooth, with only small chunks remaining. This may take a few minutes.
Add the red onion, parsley, melted Country Crock® Plant Butter, lime juice, curry powder, salt, and pepper and stir until completely combined.
Spread about a teaspoon of plant butter on each of the faces of toasted bread. Layer one piece of bread, plant butter side up, with chickpea smash, shaved zucchini, and arugula, followed by the second piece of bread, plant butter side down. Repeat with remaining sandwiches.
