  • 1 1/2 cups sweetened shredded coconut, toasted
  • dairy-free chocolate mini eggs, or vegan jelly beans

Instructions

  1. Preheat the oven to 350°F. Brush a half-dozen donut pan with melted Country Crock® Plant Butter.
  2. Combine the oat milk and vinegar in a glass measuring cup. Let it rest for 5 minutes while you prepare the remaining ingredients.
  3. In a medium mixing bowl, sift together flour, baking powder, baking soda, and salt. Whisk in the sugar.
  4. Whisk the egg, melted Plant Butter, and vanilla into the oat milk. Pour the wet ingredients into the dry ingredients and mix just until no lumps remain.
  5. Spoon the batter into the prepared donut pan. Bake for 8-10 minutes, until the donut springs back when gently poked. Let cool in the pan for 5 minutes before overturning the donuts onto a wire rack to cool completely before glazing.
  6. Once the donuts are cool, prepare the glaze. Combine the chocolate chips and corn syrup in a heat-proof bowl. Microwave it for 30 seconds, stirring to begin melting the chocolate chips. Add the hot melted plant butter and salt and stir until completely smooth. Let sit for 5-10 minutes to cool and thicken a bit.
